Greek Style Lamb with Rosemary New Potatoes

A great and easy recipe for fragrant roast lamb, inspired by greek cooking. It’s a one pot wonder so no need to worry about washing up 😉

Ingredients for 4 people:

  • 1 whole shoulder of lamb (you could also use a leg of lamb if you prefer leaner meat)
  • 1 kg new potatoes
  • 5 sprigs of rosemary
  • 6 garlic gloves
  • 1 tsp paprika
  • 1 tsp smoked paprika
  • 1/2 tsp cinnamon
  • 1 tsp dry oregano
  • 1 tsp dry thyme
  • 1 tbsp dry mint
  • juice of 1/2 lemon
  • 2 tbsp olive oil
  • salt and pepper to taste
  • 200 ml water

Cooking Method

Put 2 rosemary sprigs and 3 garlic cloves aside.Discard the stalks from the rosemary and chop finely. Mix it with all the rest of the herbs and spices. Add the olive oil and blend in a  food processor or with pestle and mortar.

Score the fatty side of the lamb into squares and rub the marinade all over. Leave the lamb in the fridge to infuse the flavours for 2 hours.

Heat the oven on 180C. In a large roasting tin layer the remaining rosemary sprigs. Put the lamb on top and arrange the new potatoes around it. Crush and add the garlic on top of the potatoes and pour in the water. Cover tightly and bake for 2- 2 1/2 hours or until the lamb in falling off the bone and the potatoes have a golden colour on top. Serve with roasted pepper salad or sauteed spinach.
