Ingredients for 4 burgers:
For the burgers:
- 400 g mince beef
- 100 g minced pork ( or make your own with lean pork chops minced in a food processor)
- 3 tbsp tomato ketchup
- 1 tbsp Guinness Brown sauce
- 1 egg
- 1 large onion
- 2 garlic cloves
- hand full of chopped parsley
- 1 tsp black pepper corns
- 1 tsp caraway seeds
- 1 tsp onion seeds
- 1 fresh red chilli
- salt to taste
- 4 slices of strong mature cheese
- 2 tomatoes
- 2 small pickled gherkins
- curly lettuce leaves
- 1 red onion
- 1/4 of a cucumber
- 4 ciabatta bread rolls

- Chunky chips- I just used Mccain’s Gorgeous Chips in beef dripping, they are absolutely amazing.
- Optional- burger relish
Put the pork and beef mince into a large bowl. Using a spice grinder grind all the spices and put on top of the meat. Puree the garlic, chilli, onion and parsley with a food processor and add to the meat. Add the rest of the burger ingredients and mix well. Form 4 large burgers onto a tray, brush with a little oil, cover and leave aside.

Prepare the salad garnished by cutting the tomatoes, onions, gherkins and cucumber into thin circles. Tear the lettuce leaves. Arrange everything onto a serving dish and set aside.
At this point you need to start cooking the chips according to instructions. They take about 20 mintes in the oven.
Heat a griddle pan until smoking and cook the burgers for 4-5 minutes on each side or until cooked through. Don’t turn them too many times, just once on each side.
When the burgers are cooked, put them on a warm plate, lay a slice of cheese on top and cover with foil to let them rest. Meanwhile half the ciabatta rolls and quickly toast on the griddle pan, put them onto a plate. Get the chips out of the oven and put them into a bowl.
To serve lay everything on the table with individual plates, so everyone can make their own burgers. Fun, right?
