Summer Bean Salad

This is a very quick yet delicious salad, you can serve on its own or as a side. I served mine with my Spanish Tortilla. I hope you enjoy it! 😉

Ingredients:

  • 2 red roasted peppers
  • 4 tomatoes
  • 1 drained can of chick peas
  • 1 drained can of cannelloni beans
  • 1 cucumber
  • 1 onion
  • few sprigs of spring garlic (or 1-2 crushed garlic cloves)
  • juice of one lemon
  • 2 tbsp extra virgin olive oil
  • 1 carrot
  • small bunch of parsley
  • salt and pepper to taste

Preparation Method:

Pour the drained beans and chick peas into a large bowl. Peel and chop the roasted peppers. Chop finely and add all the rest of the vegetables and the garlic. Dress the salad with lemon juice, olive oil and salt and pepper to taste and sprinkle chopped parsley on top.

This salad is tastes better if you leave it for a couple of hours in the fridge so the flavours really develop. You can also prepare it the day before.
