Vanilla, Lemon and Strawberry Cupcakes

Ingredients for 12 regular or 18 mini cupcakes:

For the cup cakes:

  • 125g unsalted butter
  • 125g sugar – caster or unrefined.
  • 125g self rising flour
  • 4 tbsp milk
  • 2 eggs
  • 1 tsp vanilla essence
  • a few drops of lemon/ strawberry flavouring and food colouring (if you are using any)
For the Icing:
  • 75g unsalted butter
  • 3-4 tbsp boiling water
  • 150g icing sugar
  • 1 tsp vanilla essence
  • a few drops of pink food colouring
  • a few drops of strawberry and lemon food flavouring
  • Assorted sugar sprinkles for the top
Cooking Method:
Preheat the oven on 180 C. Beat the sugar and the butter until it’s well mixed.It helps if the butter is softened. Add the eggs and the vanilla essence and beat until it’s mixed well. Sift in the flour and fold in the mixture. Divide it in three and add the lemon and strawberry flavouring and the pink colouring to the strawberry mix if using.
Line a cupcake tray with cupcake cases and pour in the mixture to fill up to about 3/4 of the cases. Bake for 15-20 minutes or until they are golden colour in the preheated oven (do the toothpick test if needed). Cool on a cooling rack. I actually baked mine in a cupcake machine I got for Easter, it’s just one of those gadgets I guess 😉
Meanwhile make your cupcake icing. Mix the softened butter, sugar and vanilla and beat until it becomes soft and creamy, adding a little bit of the boiling water at a time. When you are happy with it, devide into three and mix the food flavourings and the pink colouring if you are using any. I found that the lemon flavouring tastes a lot nicer than the strawberry 😉
When the cupcakes have cooled down, start decorating with the icing and a piping bag. Sprinkle with the decorations on top and arrange on a cupcake tray. Aren’t they pretty? 😉
