Oriental Grilled Salmon with Stirfried Vegetables

This is a really quick and light meal with a bit of a kick. I guess it’s oriental inspired, as it has both Thai and Japanese influences.

Ingredients for 4 people:

  • 4 Salmon fillets

For the marinade:

  • 2 crushed garlic cloves
  • 1 inch cube ginger- finely grated or crushed
  • 1 chopped red chilli
  • 1 tbsp fish sauce
  • 1 tbsp oil
  • 1 tbsp honey
  • Juice of 1 lemon
  • Juice of 1/2 lime
  • sprinkle of five spice
For the stirfry:
  • 175g cooked mussels
  • 2 packets of stirfry mixed vegetables (or make your own with vegetables you have available). Allow about 2 handfuls per person.
  • 1 crushed garlic clove
  • 1 inch crushed ginger
  • 2 tbsp Thai Red Paste
  • 1 tbsp Fish Sauce
  • 1tsp light soy sauce
  • 1 tbsp peanut oil
Cooking Method
Mix all the marinade ingredients and marinade the salmon fillets for at least 30 minutes. Heat the grill on high and grill the grill on high and grill the salmon for 15-20 minutes or until cooked.
Meanwhile heat the peanut oil into a wok and add all the stirfry ingredients. Cook for about 10- 15 minutes stirring constantly. Serve immediately. I also served my Oriental Samphire Salad with this and it was great!
