I’ve always loved tiramisu, but thought it was really hard to make. Truth is this is one of the easiest desserts out there. It’s so quick and easy and yet it tastes delicious.

Please note this is my version of tiramisu, I am not using Masala wine and eggs as the original Italian recipes, but the result is great.

Ingredients for 8 people

  • 1 packet of ladies fingers
  • 300 g mascarpone
  • 300 g double cream
  • 2 tbsp caster sugar
  • 1 tsp vanilla essence
  • 2 tbsp Coffee liquor ( Disaronno, Amaretto etc.)
  • 1 tbsp Whiskey
  • 2 tbsp cocoa powder
  • 50 g dark chocolate
  • 1 cup espresso coffee

Cooking Method

Make a cup of strong espresso, pour it in a bowl and leave it aside to cool down. Meanwhile whisk the  mascarpone, double cream, vanilla essence, whiskey, coffee liquor and sugar until you get a thick fluffy consistency and all ingredients are mixed well. Taste and adjust alcohol or sugar if you want.

Get a square cake tin and start dipping the lady fingers in the coffee and layering them on the bottom. You only need to dip them quickly, as they soak the liquid really well. When you have covered the bottom of the tray ( takes about 12 lady fingers) pour about 2/3 of the mascarpone mixture on top and spread equally.

Sprinkle the cocoa powder evenly on top and repeat with a second layer of lady fingers.  Pour the rest of the mascarpone mixture on top and spread evenly.

Grate the dark chocolate on top so it covers really well. Cover with cling film and chill in the fridge for at least 4 hours before serving. If you can make it a day in advance it tastes even better.
