Ingredients for 12 muffins:
- 2 cups of self rising flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup of sugar*
- 1 cup of milk
- 2 eggs
- 1 tsp vanilla extract
- 100 gr of butter
- 50 gr of cooking dark chocolate
- 4 large strawberries
Put the oven on 180 C. get all your ingredients together and line the muffin tray with muffin cases ready to be filled.
Sift the flour and mix with all the dry ingredients. Beat the eggs, sugar, butter, milk and vanilla essence together, best in a food processor. Don’t worry if it curdles, the end result will be great. Meanwhile chop up the chocolate and strawberries into little chunks.
Mix the wet ingredients with the dry ingredients very quickly and don’t over stir it. Add the chocolate and strawberry chunks to the mixture and make sure they are mixed in well. You should have a nice thick batter now. Spoon the batter into the muffin tray and bake for about 25 minutes or until they are nicely golden colour on top. You can always do the tooth pick stick trick to make sure they are thoroughly cooked.
Once they are ready, take the muffins out of the muffin tray and let them cool down on a grill racking.
A few tips and tricks:
This is my recipe for muffins, you can add any other filling instead of the chocolate and strawberries (mashed bananas, blueberries, nuts, etc). Also if you haven’t got a 12 muffin tin you can always cook the muffins into two batches. This is what I did. If you haven’t got muffin cases it’s a bit tricky and you need to grease the tray and sprinkle with a little flour. I think muffin cases are really essential though!
* The strawberries add a bit of sharpness to the muffins, if you like really sweet stuff you might want to compensate by adding more sugar, using milk chocolate etc. I like the recipe as it is as I am not keen on too much sweetness.
